Stopped by this place about 2:15 on a Saturday afternoon and they still had the Texas Trinity left. Timing is everything. The ribs were excellent, very tender, and moist with a perfect bite mark. The brisket was also perfectly cooked, very tender, and moist with the fat melting in my mouth. The jalapeno sausage was pretty average with no hint of jalapeno flavor or spice. Sadly, there was no smoke flavor in any of the meats. They did give us a very generous portion of meats, a lot more than you get on most 3 meat plates. We stuck with mac and cheese for our side and found it tasty with a bit of added brisket. The ribs were good enough we bought a full rack to deliver to a friend later that evening. He was very happy.
As we finished our meal a short line had formed and the SOLD OUT was brought out and set up outside. Yup, timing is everything.
