Upcoming

We've been living off our BBQ freezer cache lately, so not much chance to eat any new Q.  That's about to change, though.  I am signed up to judge the Bedford Blues and BBQ fest BBQ contest (KCBS State championship) with 33 teams competing on September 2.   Then I'm off to the Texas Monthly BBQ fest on September 23 with 21 joints to try.  Finally, I think I will sample the Meat Fight in Dallas where fancy restaurant chefs will try their hand at BBQ.  Honestly, I wish the JUDGES were doing the cooking!

Good Company

So one of my friends, Lee Petty, comes up to me today and says "Hey congratulations!"  Of course I answer "Huh?  What?"   He says "On the BBQ blog list, you were one of the top 10".  To which I again reply, "Huh?  What?"  Then he tells me about this Twitter tweet which Daniel Vaughn, The BBQ Snob over at Full Custom Gospel BBQ (my hero) re-tweeted from the Texas Monthly BBQ twitter account.  Not being much of a tweeter or a tweetee, I, of course, had no clue about any of that.  But it seems the nice folks over at Chef2Chef.net listed this humble little BBQ blog as one of "10 Smokin' BBQ blogs" and listed it in the company of some of MY favorite BBQ blogs that I follow and read daily.  Thank you Chef2Chef!  Here's their article:

More Home Brisket 6/17/12

Just pulled off a 17 pound USDA choice brisket after 19 and a half hours on the little bullet smoker.  First samples are excellent!  Letting it rest an hour before slicing.  $1.99/pound at Albertson's this weekend.  This one had much less fat than the last one, only about a pound and a half needed to be trimmed off.  As usual, we needed to slice it in half before smoking to make it fit in our little bullet.

After resting we sliced it up with half for the freezer for later and the other half for the fridge for this week.  It ended up being just a bit overcooked, but the smoke flavor throughout is marvelous. No sauce needed!
