My buddy Dave in Austin did me a solid so I wanted to repay him with a brisket and some beef ribs from Pecan Lodge. Of course, I had to make sure it was up to standards so I did have to sample just a tad to make sure. It passed.
They do not cryovac yet, so I bagged it all up for him in freezer bags for transport in my cooler.
